We took a quick trip to Matt’s hometown of Arlington, VA this spring to celebrate his mom, Chickie’s retirement from the Library of Congress. It must be said, my mother-in-law is a bit of a bada$%! She worked at the Library for almost 40 years, and made such a difference there.
But okay, what I really want to talk with you about is pollo research. As you may have heard, we were inspired to bring pollo a la brasa to Seattle because of the delicious pollo joints in Arlington and DC. We’ve been working on our own special pollo a la brasa recipe for a long time, and we are pretty proud of it… but there is ALWAYS room for a little taste testing and market research. Here’s us with Matt’s mom, dad, sister, and brother-in-law, doing what we do best… loving us some pollo.
